Ingredients
1/4 cup ground flax seed meal1 teaspoon cinnamon1/2 teaspoon baking powder1/2 packet sweetener (I used Truvia) or more1/8 teaspoon sea salt (optional)1 egg, beaten1 teaspoon melted butter or other oil
Directions
Mix the flax meal,cinnamon, baking powder, sweetener, and sea salt (if using) in a coffee mug. Then add the egg and melted butter. Mix with dry ingredients. Microwave one minute until firm.

Turn out and serve with butter or cream cheese or toast before applying spread -- or slice and use to make sandwiches.
