Cauliflower Breakfast Pie

1 med. head of cauliflower, pulsed in food processor1/4c melted buttersalt & pepper to taste4 large egg2 egg whites1 med. onion, chopped1 jalapeno pepper, chopped fine1/2c 1% or skim milk2 oz. light pepper jack cheese
Mix cauliflower, melted butter and salt and pepper and press into 9" pie plate. Bake for 20 minutes at 350 until lightly browned.
Meanwhile, sauté the onion and jalapeno in a non stick pan with a bit of water or broth until soft. Let cool. Whisk together eggs, egg whites, milk and the sautéed vegetables. Pour over the cauliflower crust. Sprinkle with pepper jack cheese and bake for 30 minutes at 350, or until set. Let cool and cut into 6 wedges.
