Ingredients
1 Lg. Egg1 1/4 cup Buttermilk2 Tbls. Canola Oil1 1/4 cup of All purpose flour1 Tbls. granulated sugar1 tsp. Baking powder1/2 tsp. Baking soda1/2 tsp. salt2 Tbls. crisco for frying
Directions
In a medium bowl, using a fork, mix together flour, sugar, baking soda, baking powder, and salt.

In a small bowl, beat the egg with the buttermilk and oil.

Make a well in the dry ingredients and pour in the wet ingredients. Stir together, gently until blended. (It's okay if the batter is a little lumpy, just make sure the bottom is mixed in)

Heat your griddle or pan and add a little crisco. (This makes yummy crispy, edges) I use a 1/3 sup measuring cup to pour the batter on the hot griddle.
When the top of the pancake is starting to bubble, then flip it! Fry the other side until the pancake is cooked all the way through (just a minute or so).

Serve immediately with your favorite toppings or buttermilk syrup! ( I have that recipe on here too!!)
