Bijou's Slow Cooker Pot Roast

Ingredients
3 Pound Chuck Roast1 Cup Low Sodium Beef Broth1 Medium Yellow Onion - chopped2 lbs Russet Potatoes - peeled & quartered9 oz Baby Cut Carrots - sliced2 Tbsp dried ParsleySalt & Pepper to taste (if you must)
Directions
1. If you must add salt, season the chuck roast with salt and pepper.

2.Heat a large skillet over medium-high heat; brown roast on all sides, about 4 minutes per side. Transfer roast to a slow cooker.

3. Pour the beef stock into the skillet, and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon.

4. Add the broth and onions into slow cooker; cover and cook on Low for 5 hours.

5. Add potatoes, carrots, celery, and parsley. Cover and cook on Low until roast is tender and cooked through, 3 additional hours.


Serving Size: Makes 8 servings - Approx. 6 oz of meat
