Easy Chicken and Rice

Ingredients
Casserole:1 lb. boneless, skinless chicken breast, chopped into bite-sized pieces1 1/2 c. white rice, cooked1/2 c sliced, fresh mushroomsSauce:2 c Silk Original Soymilk1 clove garlic1/2 c onion, chopped6 oz mozzarella cheese, shredded
Directions
Preheat oven to 350. Chop chicken and mushrooms, and combine in a medium bowl with the rice, cayenne pepper and salt. Pour into a 3-qt. casserole.

Place the milk, chopped onion, garlic, salt, and white pepper in a sauce pan and bring to a boil. Simmer 5-7 minutes, or until the milk begins to thicken and the garlic and onion are fragrant. Add the cheese and stir until combined.

Pour the sauce over the casserole ingredients, cover, and place in oven 40-45 minutes, or until sauce is bubbly and chicken is cooked through.
