Chipotle Chicken Chili

Ingredients
3 bacon slices 1 pound skinned, boned chicken breasts, cut into 1-inch pieces 1/2 cup chopped red onion 5 garlic cloves, minced 1 can whole-kernel corn1 can Rotel diced tomatoes and chiles1 (15-ounce) can pinto beans, rinsed and drained 1 (7-ounce) bottle roasted red bell peppers, drained and sliced1 package of chili seasoning (William's Chipotle Chili seasoning is great)
Directions
Cook bacon in a large skillet until crisp. Remove bacon from pan; crumble. Add chicken to drippings in pan and saute for 4 minutes. Remove from pan; keep warm. In the same skillet, saute the onion and garlic for 3 minutes. Add corn, Rotel, beans, bell peppers, and chili seasoning; cover and cook 5 minutes. Return the chicken and bacon to pan; cook 5 minutes or until thoroughly heated.

I top with a sprinkle of fat-free cheese and scoop of fat-free sour cream (not included in nurt. info)

    We loved it! I doubled the recipe and made this for a church chili cook-off and althought it didn't win :( my crockpot was EMPTY! Everyone loved it! I could not find the brand of chili seasoning recommended so I just added 1/4 cup chili powder and 1 Tbsp. chipotle spice. Will make this again! - 1/10/11

    The flavor in this chili is excellent. I added some actual chopped chipotle peppers and some chicken stock (I prefer my chili a little soupier) but the recipe is simple and something I would make again. The bacon gave it a great flavor, even with the spicy chipotles! - 1/2/11
