Meringue Christmas Cookies

Ingredients
2 Egg Whites, beaten very stiff1/2 cup sugar, gradually added1/2 t mint flavoring or almond extract1/2 c. chocolate chips1/4 cup chopped pecansfood coloring
Directions
Preheat oven to 350
Beat eggs till very stiff
(NOTE: Flavorings not listed in Spark ingredient list)
Gradually add sugar
Fold in last 3 ingredients.
Also add food coloring in red or green.
Cover cookie sheets with aluminum foil.
Drop rounded tsp. slightly apart.
Put in oven and TURN OFF the heat.
Leave in closed oven at least 2 hours or overnight to dry up the cookies.

    Great recipe! Very clear directions. I tried it with Splenda blend and it came out great! This recipe has lots of possible variations. I tried it with coconut extract and some unsweetened coconut. I can see this cookie being a big hit for dessert day at work, where everyone is always on a diet. - 2/11/09

    I love meringues! I usually make mine plain or with a bit of crushed candy cane though. I also like to pipe them in the shape of "kisses" with a pastry bag and sprinkle with colored sugar. - 12/19/09

    In my family, we've always called these "Nighty-Night Cookies." On Christmas cookie baking day, we made lots of different kinds of cookies and this was the type we did. Put them together, throw them in the oven and say "Nighty-Night, Cookies." They are really very yummy. I leave out the nuts. - 12/3/08

    I have been making meringue cookies for years the exact same wqy.The only difference I have never put pecans in it.I make 2 versions one with mint and add a little green food coloring and one with just chocolate chips.These are my absolute favorite Christmas Cookie. - 12/3/07
