Ingredients
1 large Eggplant1/4 cup Lemon Juice1/4 cup Tahini2 Tablespoons lightly toasted sesame seeds3 cloves Garlic1/2 teaspoon Sea Salt1/2 teaspoon Black Pepper1/2 tablespoon Extra Virgin Olive Oil
Directions
Pre-heat grill (or oven ) to 400 degrees. Prick the skin to the Eggplant with a fork. Wrap Eggplant in foil and grill or bake for 40 - 45 minutes. Turn occasionally. When soft remove for the heat, unwrap the foil and place in a bowl of cold water. When cooled remove from the water and peel. The skin will pull off easily when the ends are cut. Drain excess liquids for 20 minutes.
Place Eggplant and the other ingredients in a food processor or blender and puree. Put the mixture in a bowl and cover. Chill for 2 - 3 hours before serving.
