Hernandez Family smoked sausage skillet

Ingredients
*Potato, raw, 5 small 1/2 inch dice Zucchini Squash, 3 cup cubed 1/2 inch dice (1 medium onion), large chop*Canola Oil, 1 tbsp. *Red Bell pepper large chop, 3 cup *Polish Sausage (Farmer John), 14 oz. sliced 1/4 inch rounds
Directions
in a non stick skillet heat to medium. Add sausage and sauté till lightly browned and remove. add oil and sauté onion a couple minutes add bell pepper and potatoes cover and cook till potatoes are almost done. About 15 minutes. Add zucchini and sausage salt and pepper to taste and cover and cook about 5 minutes more or until potatoes are soft. Enjoy.
