Gluten Free Tilapia Fish Sticks

Ingredients
1 lb Tilapia filetsRice Chex Cereal, .5 cup crushed fine Yellow Cornmeal, .5 cup No salt seasoning, 1 tspCayenne, .25 tsp Egg substitute .5 cup Cooking spray
Directions
Preheat oven to 425. Spray a broiling pan or metal rack on a cookie sheet. Cut the fillets in half then in half again. Mix the crushed Chex, cornmeal and seasoning in a shallow dish. Pour the egg substitue into a separate shallow dish. Dredge each peice in the egg substitute then in the chex mixture. Place the fish sticks on the prepaired pan and cook for 8-10 minutes. Turn each peice over and bake for another 8-10.
