Chicken Greek Salad

Ingredients
3 oz cooked Chicken breast, diced4 oz Green Pepper, chopped4 oz Red Pepper, chopped4 oz Feta cheese, cut into small cubes1/2 regular size Roma Tomato2 tbsp cooked Quinoa4 Black Olives, pitted and slicedSalt and Pepper to taste1 tbsp Extra Virgin Olive Oil1 tbsp White Wine Vinegar
Directions
Cut peppers, chicken, cheese and tomato into medium sized pieces. Dice feta cheese to 1/4" pieces or crumble as you like. Mix all ingredients, including the oil and vinegar, together. Best if you leave the salad to sit for an hour or so before eating.
