Hearty tomato basil soup

Olive oil spray3/4 C chopped onion2 med. Garlic cloves1 C chopped carrots2-3 bay leaves1/2 t red pepper flakes4 C diced tomatoes, canned or fresh1 can cannellini beans4 C chicken broth3 T fresh basil
1. Heat a saucepan over medium heat and spray with oil.
2. Add onion, carrot, garlic, bay leaves, and red pepper flakes. Sauté for 4-5 minutes, until onion and carrots are tender.
3. Add tomatoes, beans, and broth. Bring to a boil, then turn the heat to low and simmer for 15 minutes.
4. Remove from the heat and let cool slightly. Remove bay leaves and add basil.
5. Pour into a blender or food processor and blend until smooth.
6. Reheat in same pan and enjoy or freeze for later.
