Lemon Poppy Seed Muffin

Ingredients
Dry ingredients:1 cup (c) all purpose flour1 ½ teaspoons baking powder¼ teaspoon salt1 ½ teaspoons poppy seedsWet ingredients:1 large egg½ cup 2% milk1/3 cup sugar3 tablespoons melted butter½ teaspoon vanilla1 ½ teaspoons ground lemon zest
Directions
Position a rack in the center of an oven and preheat to 400 degrees Fahrenheit. Grease a standard muffin pan (or line with muffin cups). Whisk together the dry ingredients in a large bowl. Whisk together the wet ingredients in another bowl. Combine the dry ingredients with the wet ingredients and mix ONLY until incorporated. Divide evenly (using #12 standard scoop) into 6 muffin cups and bake for 12-15 minutes (until an inserted toothpick is removed, clean).
