Smoked Ancho-espresso Rubbed Pork Chops

6 pork chops 1 tbsp ancho powder 1 tsp espresso (ground coffee) 1/2 tsp onion powder 1/2 tsp garlic powder 1 tbsp brown sugar 1/4 tsp dried thyme 1/2 tsp cracked black pepper (fresh) 1 tsp paprika (if using smoked, reduce to .5 tsp) 1/2 tsp cumin 1/2 tsp chili powder (Chimayo red, substitute cayenne, reduce to .25 tsp) Salt 1/2 cup barbeque sauce
Mix all dry ingredients and rub onto pork chops. For best results smoke at 275 for 3 hours, wrap in foil for 1 hour, remove from foil for 30 minutes or till done. Alternatively, cook indirect on a grill. Brush with a very light layer sauce.
