PNGwen's Smoked Sausage with Red Cabbage

1 small head red cabbage, thinly sliced2 medium sweet potatoes, peeled, cut into 1/2-inch slices1 granny smith apple, cored, thinly sliced1lb. smoked turkey sausage, cut into 1-inch slices2 tablespoons brown sugar1/8 teaspoon ground cinnamon1/4 cup red-wine vinegar Dijon-style or sweet-hot mustard
1) In a slow cooker, alternate layers of cabbage, sweet potatoes, apple and sausage.
2) In small bowl, combine brown sugar, cinnamon and vinegar. Pour over ingredients in pot.
3) Cover and cook on LOW 7 to 8 hours.
4) Serve with mustard.
Serving Size: makes .6 - 1 1/4 cups servings
