Honey-Cilantro Shrimp Soft Tacos

Ingredients
1 tsp. vegetable oil1 large onion, sliced into strips2 bell peppers, sliced into strips3-4 cloves garlic, chopped1 jalapeno (remove seeds if you don't like it hot.)1 1/2 lb. precooked cocktail shrimp, tails removed4 tbsp. honey3 tbsp. fresh cilantro, chopped2 tsp. coriander2 tsp. cuminsalt and pepper to taste8 tortillas, soft taco size
Directions
Warm oil in skillet over medium heat. Add onion, garlic, bell peppers, and jalapeno. Cook until onions are transparent, about 5-10 minutes. Add shrimp and cook only until warmed through. (The longer they cook, the more they lose water and shrink.)

If you see a lot of water at the bottom of the pan after cooking the shrimp, drain mixture in a colander, return to skillet and stove. Lower the temperature of the stovetop to low. Add cumin and coriander, salt and pepper to taste.

In a small bowl, combine honey and chopped cilantro. Place shrimp mixture in tortilla and top with a spoonful of the honey mixture. You can top with salsa or sour cream if you wish. Enjoy!

*Note: these tacos can be pretty messy, so you may prefer to eat them with a fork and knife

    I actually doubled the honey sauce when I made this (my husband to drench things in sauce). Was totally unneeded. We barely used half, and even then it felt like it was a bit much. The honey sauce goes a long way. It was great though, we really liked it! - 3/19/08

    This was AMAZING!! A great contrast between spicy and sweet. I did only use 1/4 of the jalapeno pepper because I was nervous and it was still had a kick. I also only used about 1/2 the honey and just added it right on top of the veggies and shrimp and threw in the cilantro too. So YUMMY!! - 2/22/11

    Really good. I used crawfish since that's what I had on hand and used red bell peppers instead of green. Next time will half the honey sauce and add lime juice to cut sweetness - a bit TOO sweet for me. And will DEFINITELY eat over rice - tacos were very very messy!!! But yummy! - 5/20/10
