3/4 c water1 tsp sugar1 1/2 tsp yeast2 c flour1 tsp salt2 tsp olive oil2 tbs salted butter1 tbs shredded parmesan
In the bowl of your stand mixer, combine sugar and warm water. Add yeast and stir. Allow to bloom for five minutes. Meanwhile, heat oven to 225 degrees. Using the dough hook, mix in salt and flour until a ball forms. Add 1 tsp olive oil and a tbs of flour if necessary. Knead in an additional tbs of flour with your hands. Grease a 9 inch cast iron skillet with the remaining olive oil. Use your fingers to form the dough into a disc. Place the dough the skillet and stretch it to the edges. Turn oven off and place the skillet inside. Allow it to rise for 20 minutes. Remove from the oven and preheat to 400 degrees. Melt butter. Brush one-half of the melted butter over the dough and sprinkle on Parmesan. Bake for 20 minutes. Brush remaining butter. Slice into 6 wedges and serve warm.
