Paleo Chicken Fajita Salad

8 oz boneless, skinless chicken breastAdobo seasoning (optional, not in calorie count)Salt and pepper8 T guacamole4T salsa2 c shredded Romaine1 large bell pepper (red or yellow), sliced1/2 medium onion, sliced1T olive oil2 T fresh cilantrolime wedges for serving
Get out your cast iron skillet and fire it up. Season the chicken with adobo. Add olive oil, and cook chicken breasts. Remove from pan and let rest. While the chicken is resting, add the bell pepper and onion to the same pan. Cook over medium-high heat until crisp-tender, with some charring on strips.
Cut chicken into strips, then assemble your salad. One salad is: 1 c Romaine, 2T salsa, 4T guacamole, 1/2 of pepper/onion mixture, 4 oz chicken, 1T fresh cilantro. Garnish with lime wedges.
