Quinoa Tabbouleh

Ingredients
2c water1 pinch salt1/2 tsp sea salt3 tomatoes diced2 bunches green onion diced1c Fresh Parsley1c quinoa1/4c olive oil1/4 c lemon juice1 cucumber diced2 carrots grated
Directions
In a sauce pan, bring water to a boil. Add quinoa and a pinch of salt. Reduce heat to low cover and simmer for 15 minutes. Allow cooling to room temperature; fluff with fork. Meanwhile, in a large bowl, combine olive oil, sea salt, lemon juice, tomatoes, cucumbers, shallots, carrots and parsley. Stir in cooled quinoa.
