Geri's Chicken Veggie Soup

Ingredients
Chicken Breast, no skin, 5 unit (yield from 1 lb ready-to-cook choppedChicken Broth, 3 cup (8 fl oz) Onions, raw, 2 medium (2-1/2" dia) choppedMixed Vegetables, frozen, 1 pack (2-1/2 lb) Celery, raw, 1 stalk, small (5" long) chopped*Potato, raw, 2 large (3" to 4-1/4" dia.) cubedSalt, 2 tbsp Pepper, black, 1 tbsp Rosemary, dried, 1 tbsp Thyme, ground, 2 tsp Garlic, 3 cloves mincedBay Leaf, 1 tsp, crumbled *Coriander seed, .5 tsp Parsley, dried, 1 tbsp Water
Directions
Chop all fresh ingredients. Add all meat and vegetables into a large stock pot. Add spices. Add broth. Add enough water to cover all the ingredients plus at least an inch. Bring to a boil for roughly 20 mins, then reduce heat and let simmer for at least 1 hour.

Can be frozen into individual servings.
Yields approximately 20 servings give or take
