Gluten Free Vegan Pecan Pie

In a large bowl mash the banana well until it becomes a purée. Mix in the sugar and syrup, melted oil/butter, vanilla and salt. Mix in the dates and try to prevent them from clumping in one place. Add the oat bran to thicken slightly. Mix in 3/4 of the pecans and pour the mixture into your pie crust. Reserve the last few pecans for the top of the pie.
I baked for 50 minutes at 325F, but next time would try reducing the temperature (45 minutes at 300F for example).
Serving Size: makes one pie
