Hearty Italian Soup with Tortellini

20 oz Ground turkey, Italian seasoned (Jennie-O brand works well)1.5 cups chopped yellow onion4 cloves chopped garlic2 chopped green bell pepper4 cups beef broth 3 cups water3/4 cup red wine (merlot works well)4 cans of diced tomatoes (14.5 oz)2 cups thinly sliced baby carrots3 TB dried basil 1 TB dried Italian seasoning5 medium"baby zucchini"1/2 cup shopped fresh parsley20 oz cheese-filled tortellini
In a GIANT soup pot (at least 2+ gallons):
1) Brown ground turkey, place turkey in colander and rinse with hot water to remove excess grease. Drain most of grease, leaving just enough to coat bottom of pot
2) Saute onions, garlic & bell peppers until onions are tender.
3) Add in: broth, water, wine, tomatoes (with juice), carrots, basil & Italian seasoning, & sausage.
4) Bring to a low boil, then simmer uncovered for 20 min.
5) Add Zucchini, parsley and tortellini. Simmer 25 minutes, or until tortellini is tender
6) If too thick, add 1+ cup of water/broth
7) (optional) Serve sprinkled with Parmesan (not added to calorie count)
