2 2/3 cups white sugar2/3 cup light corn syrup1/2 cup water (use less 1 tbsp. on humid days)2 egg whites1 tsp flavoring/extract (vanilla, mint, etc)
1) Cook sugar, corn syrup and water in a medium saucepan over medium heat, stirring constantly, until sugar is dissolved. Continue to cook without stirring to hard ball stage (between 250*F and 300*F depending on what sea level you're at) - this will take about 10-15 minutes.
2) Meanwhile, about 5 minutes into bringing the sugar mixture to hard ball stage, beat the egg whites in a large bowl until stiff peaks form.
3) When syrup reaches hard ball stage, continue to beat the eggs while pouring the syrup in a this stream over them. Add flavoring/extract at this point. Continue to beat mixture until it becomes slightly dull and starts to hold its shape. This will take about to minutes, mixture may actually become too stiff to continue to beat with an electric mixture - at this point it's REALLY done.
4) Quickly drop by spoonfulls onto waxed paper (wet your finger to make sliding the mixture off the spoon easier). Let stand at room temperature, turning candy over once, until outside of candy is completely firm, at least 12 hours.
Store in an airtight container.
