1 cup lentils (rinsed)1/2 cup pearl barley6 cups vegetable stock1 onion (chopped)2 cloves garlic (crushed)2 carrots (sliced)2 celery ribs (sliced)1/2 tsp oregano1/2 tsp ground cumin1/4 tsp black pepper1/4 tsp red pepper flakes3/4 tsp salt
1 Place all ingredients except salt into a large pot and bring to a simmer.
2 Cover and cook, stirring occasionally until lentils are tender, about one hour.
3 Add salt.
