Creamy Coconut Chicken

1 Tbsp Olive Oil1lb boneless skinless chicken breast- excess fat removed and cubed in to 1" pieces1 green onion chopped1oz cooking sherry (or other cooking wine)1/2 cup coconut milk1/4 cup greek yogurt- fat free plain2 Tbsp sugar1 tsp each of coconut and vanilla extracts
1 Heat the olive oil in a frying pan or wok over medium-high heat. Sautee the chicken for 3-5 minutes til nearly cooked through
2 Add green onion and carefully add the wine. Cook 1-2 minutes more until chicken begins to caramelize.
3 Remove the chicken from the pan and set aside. Add the greek yogurt, coconut milk, and sugar to the pan. Simmer on medium, stirring occasionally, until it begins to thicken and is reduced by half (about 5-8 minutes).
4 Add chicken back into pan along with the coconut and vanilla extracts. Simmer 1-2 more minutes and serve.
