Sinus Clearing Thai Turkey Soup

˝ tbsp canola oil1 large onion, sliced in thin half-moons5 large carrots, coarsely shredded1 tsp toasted sesame oil5 garlic cloves, minced2 Thai chillies, minced (start with 1 if you’re heat-sensitive)1 tbsp fresh grated ginger1 tbsp coriander2 tsp cumin2 tsp paprika1 tbsp turmeric˝ tsp allspice6 cups homemade turkey broth (or low sodium chicken stock)2 ˝ cups canned coconut water1 tsp raw sugarzest of 1 lemon2 tsp tamari1 cup black or brown rice2 cups cooked, chopped skinless turkey meat (about 10 oz)2 cups finely chopped kale
Heat canola oil in a large pot over medium heat.
Add the onions and carrots and cook, stirring often, until carrots and onions soften - about 10 minutes.
Add the sesame oil, garlic, chillies, ginger and spices. Cook 1-2 minutes, until fragrant.
Stir in the broth, coconut water, sugar, lemon zest, soy sauce and rice.
Bring to a boil, then reduce heat and simmer 30 minutes.
Add the turkey and kale, re-cover and cook another 15 minutes.
Serving Size: Makes 8 bowls
