Granny's Green Rice

Ingredients
2 eggs2 cups milk2 cups shredded cheddar cheese1 cup finely chopped onion1 cup chopped parsley1T dried yellow mustardpepper and salt to taste2 cups cooked rice
Directions
In a casserole dish beat eggs, add milk, add cheese, add onion, mustard and parsley. mix well then add 2 cups cooked rice. Bake at 350F for an hour. sprinkle paprika on top for additional holiday color!
