Ingredients
1 tsp olive oil1 diced onion1 cup diced celery1 cup diced zucchini1 cup chopped kale2 cloves garlic 4 cups broth1 (14.5) ounce can chopped tomatoes with juice2 handfuls of baby spinach leaves.fresh sage and thyme, salt and pepper as desired
Directions
Saute veggies in olive oil, add diced canned tomatoes and spinach leavesm simmer 15 minutes more. Add salt and pepper, sage and thyme as desired.
