Three Chile Turkey Tortilla soup

6 cups low sodium chicken broth4 cups left over turkey or chicken, cut into bite sized chunks4 cups frozen or fresh corn2 cups diced onion8oz diced green chiles (2 cans)2-3 tbsp chef meg taco seasoning (1T chile powder, 1tsp each cumin, oregano, chile flakes)1 can petite diced low sodium tomatoes1-2 chicken bouillon cubes, crushed3/4 cup chopped fresh cilantroTostitos artisan spicy tortilla chips 1/4 cup shredded pepper jack cheese
Pour a thin layer of chicken broth in large soup pan and saut� onions till tender. Stir in chiles and seasoning mix; cook until fragrant. Add tomatoes, chicken bouillon, chicken broth and bring to a boil. Add leftover chicken or turkey and corn until warmed, then lower heat to simmer for 30 minutes. Stir in cilantro and let cilantro infuse soup for 15-20 minutes after turning off heat.
Add a sprinkle of pepper-jack cheese and crushed tortilla chips to each bowl. Enjoy!
