Overnight Steel Cut Oatmeal

Ingredients
1/2 cup steel cut oats2 cups waterdash salt
Directions
In a medium saucepan, combine all ingredients and bring to a ROLLING boil, stirring occasionally.

Cover, turn off heat. Let sit overnight.

In the morning, stir and reheat gently. Then add sweetener (splenda, honey, SF Torani syrup, etc.) as desired. Also great to stir in fruit (chopped apple, banana, pear, oranges, etc.).

Frozen fruit works great - just microwave for ~1 minute to warm the fruit first.

This stores VERY well in the fridge. I make a large batch on the weekend and put in individual tupperware containers. 1-1.5 minutes in the microwave, and it is warm and ready to eat in the morning.

    I make steel cut oats this way all the time, and have never had an off smell or any sign of the food going "off". We eat it more in cold weather, and, of course, I don't put any dairy products in the oatmeal overnight. You could certainly put the pan in the fridge overnight, but cool it beforehand! - 3/12/12

    This is a great idea. I added vanilla extract and cinnimon to the water while cooking.
    If your concerned about leaving it out over night, make it early enough in the evening that you can just place the pot in the fridge, in the morning add a little milk, heat and stir. - 1/5/11

    Is this really food-safe? Won't the mixture spend too long at incubation temperature? We tried this once, and the pot had a green scum and a funny smell in the morning. I've been scared to try it again.
