Spicy Quinoa

Ingredients
2 tomatoes, diced1/2 red bell pepper, diced3 cloves garlic, crushed1/2 tsp chilli pepper1/2 onion diced1 tbsp olive oil1 tbsp dried parsley1/3 cup quinoa2 cups vegetable stock1 cup hot waters & p to taste
Directions
1. In pot on med hat, heat olive oil & saute onion and bell pepper for 5 mins
2. Add tomatoes and continue to stir for 3 to 4 minutes.
3. Then add garlic and chili, stir 1 minute
4. add stock and water, bring to boil
5. Add quinoa and parsely, season with S+P
6. Simmer for 12 minutes. Serve immediately
