Catlovers MF Sirloin Pot Roast - 2 servings

Ingredients
1/4 cup chopped celery1/4 cup chopped onion1/4 chopped bell pepper1/2 cup zucchini or yellow squash1 tsp oregano1 bay leaf1/2 tsp garlic powder1 tsp basil1 tsp thyme1/2 cup green beans1/4 cup chopped mushrooms1-2 tbls diced tomatoes1/2 package brown gravy mix (MF or other low sodium)
Directions
Place sirloin roast in a slow cooker. Add enough hot water to cover. Add celery, onion, bell pepper and herbs and spices. Cook on high for 3 hours. Add zucchini/squash, green beans, mushrooms, and tomatoes. Continue to cook on high for an additional 2 hours. Remove 1 cup of cooking liquid, and mix gravy mix in gradually in a small pot on the stove. heat and stir until thickened. Remove sirloin roast from slow cooker. Portions veggies on a plate, weigh beef, and cover with gravy (5 ozs. cooked bean=1 lean)
