Ingredients
Lite Coconut Milk, 2 cansRed Curry Paste, 2 tspLime Juice, .5 lime yieldsLow Sodium Soy Sauce, 2 tbspNutritional Yeast, 2 TbspVegenaise, 2 tbspBlack beans, 1 can drainedCherry tomatoes, chopped, 1/3 cupSpinach, fresh, 2 cup
Directions
Combine all ingredients except the spinach in a medium saucepan. Heat on medium-high until bubbles. Remove from heat, add spinach. Stir until spinach wilts. Serve.
