Sweet potato and Spinach soup

Ingredients
2 cloves garlic2 5" sweet potatoes 2 cups of almond milk1 stock cube or 2 cups of chicken stock1/2 onion1 dash of salt1 package of spinachCooking spray
Directions
Spray saucepan with cooking spray
Saut� onion and garlic until onions are soft
Add thinly chopped sweet potatoes and let soften
Add the almond milk and chicken stock
Add dash of salt
Add half the package of spinach
Let simmer for 15 minutes

Blend soup in food processor with the rest of the spinach, in batches if needed.

Serving Size: Makes 4 bowls of soup
