Fruity Baked Oatmeal

Ingredients
3 cups quick cooking oats3/4 cup brown sugar, packed2 tsp baking powder1 tsp salt1/2 tsp ground cinnamon2 eggs, lightly beaten1 cup milk1/2 cup butter, melted3/4 cup chopped peeled tart apple1/3 cup fresh or frozen blueberries
Directions
In a large bowl, mix all dry ingredients. In small bowl, combine wet ingredients. Add wet ingredients to dry and stir. Fold in fruit. Pour into 8 X 8 baking dish, lightly sprayed with cooking spray. Bake at 350 for 30 - 35 minutes or until knife inserted into center comes out clean.

    I have this recipe in my Taste of Home cookbook and have made it many times. It's awesome if you add in a little cinnamon and nutmeg for flavor. You can cut calories by using non-fat milk. I also use old fashioned oats not quick for better texture. Awesome comfort food. - 9/6/10

    This is a yummy, filling breakfast option great on cold mornings. I usually half the recipe for us, and it's plenty. Although, leftovers heated with a bit of milk was pretty good. - 1/8/12
