Ingredients
Boneless, Skinless Chicken BreastBell Peppers (I had yellow)Medium OnionLarge Carrot1 Can Diced tomatoes.5 can coconut milkCurry powder, salt, pepper and hot sauce to taste.
Directions
In 1 Tsp Olive Oil, cook carrots for 5 min. Add chicken, diced, and brown slightly. Add onion and pepper, saute for 1 minute. Add tomatoes and coconut milk, mix well. Add curry powder, salt, pepper and hot sauce to taste.
