Quinoa Pancakes (GF, V)

Ingredients
1/2 Cup Quinoa Flakes1/2 Cup GF Flour (Sorghum, Millet, or a variety)1/4-1/2 tsp Salt1 tsp Baking Powder1 Cup Non-Dairy milk (Almond, Coconut, Soy, etc)2 Tbl Agave or Honey1 tsp or so Lemon Juice or Apple Cider Vinegar1 Tbl Flax Seed, ground (Flax meal)3 Tbl water1/2 tsp Vanilla (optional)For variety add nuts or fruit.
Directions
In a small cup mix the ground flax seed with warm water and set aside.

Combine all dry ingredients in a medium size bowl.

Mix together the agave/honey, milk, and vanilla, whisk in the lemon juice/vinegar. Stir in the thickened flax to the milk mixture.

Stir the milk mixture into the dry quinoa mix. It will be thick.

Cook over medium low heat until bubbly and dry on the outside ring, turn over and cook for another minute or so. Serve.
