Tzatziki

Ingredients
1 cup non-fat Greek plain yogurt1 large eEnglish cucumber, peeled and seeded1 tsp extra virgin olive oil2 tsp lemon juice1-2 cloves garlic, minced finely or pressedsalt and pepper to taste
Directions
Grate cucumber. Place in center of a clean dish towel and squeeze over sink until no more juice can be extracted. Combine all ingredients, blend. refrigerate for 1 hr prior to serving to let flavors combine.
