Italian-style Rost

Ingredients
1-6 oz. can tomato paste1 pkg. dry onion soup mix2 tsp. fresh oregano, chopped2 tsp. fresh thyme, chopped1 tsp. salt1 tsp. ground black pepper2 lbs. chuck roast, trimmed of any excess fat1-16 oz. can tomatoes, drained and chopped 1 medium onion, chopped2 medium carrots, chopped1 medium potato, chopped1 large celery stalk, sliced
Directions
In a small mixing bowl, combine the tomato paste, onion soup mix, oregano, thyme, salt and pepper. Rub this mixture all over the chuck roast and place the roast in the crock pot slow cooker. Add the remaining ingredients and any leftover tomato sauce. Cover; cook on Low for 8 to 10 hours (or high for 4 to 5 hours).
