Butter Cookies with Jam

Ingredients
1 cup of light margarine (50%less fat)1 cup of sugar1 tbsp of vanilla extract2 cups of flourJam of your choice
Directions
Preheat oven to 350 degrees. With a hand mixer cream the butter and sugar until fluffy. Add the vanilla extract and add the flour and mix at low speed until incorporated. Use your hands to roll the dough into medium sized balls and arrange them on the cooking sheet leaving some space between them (ie: 2 inches). Make a shallow well on top of each cookie (you can use a teaspoon for that or your fingers) and fill the wells with the jam of your choice. Bake for 25-30 minutes or until the edges are lightly browned.

*In the nutritional calculation I did not add the jam because that will vary accordingly.
*You can also sprinkle some confectioner's sugar on the cookies after they have been baked.
