Balsamic Lentil Salad

Ingredients
3.5 cups dried brown lentils, picked & rinsed1 bay leaf2 minced garlic cloves3 tsp Dijon mustard1/3 cup olive oil1/4 cup balsamic vinegar1 chopped red onion2 chopped Roma tomatoes1/2 cup chopped fresh parsley or 1 Tbsp dried
Directions
Bring a medium saucepan of water to a boil. Add lentils and bay leaf. Cover and cook on medium-low until lentils are tender, about 10 minutes. Drain and remove bay leaf.

Dressing: Whisk garlic, Dijon, olive oil and vinegar together in a small bowl.

Combine the lentils, tomato, onion and dressing.

Serve warm or cold.
