Ingredients
Ingredients:Black-eyed peas, dried 2 cupsOlive oil, 2 tbsp Louis Rich Turkey Bacon, 10 slices cut into small piecesOnion, I large dicedRed Bell Pepper 1 large cut into small piecesGarlic, 4 cloves pressedSalt, 1 tspBrown rice, 1 cup uncookedCayenne, 1/2 tspBlack Pepper, 1/2 tsp
Directions
Rinse and remove bad peas, then add to large pot with 5 cups of water. Bring to a boil, then cover and take off the heat to soak overnight.

Rinse beans, add 5 cups of water and bring to a boil. Lower to simmer 45 minutes or until tender. Drain and return to large pot.

In saucepan, make brown rice according to directions, and using the remaining salt. (about 40-45 mins)

In frying pan, cook bacon until crisp in 1 tbsp oil. Add onion, pepper and garlic. Saute until onion is tender (about 12 minutes).
