Coconut Curry Noodle Soup

Ingredients
2 cans lite coconut milk1.5c chicken broth3T hot curry paste1c red bell pepper, sliced1c snow peas1c frozen peas2oz thin rice noodles (about half the box)2 limesgreen onions and cilantro for garnish
Directions
Whisk curry paste and some coconut milk in the pot over medium heat. Whisk until well mixed.

Add remaining coconut milk and chicken broth,stir I until well mixed

Add vegetables and cool about 8 minutes, then add rice noodles and cook for 1-2 additional minutes

Finish with juice of 2 limes

Serve with sliced green onions and cilantro as garnish. Additional lime slices or juice as desired.
