Ingredients
1 cup Cornmeal1 cup flour4 tsp baking powder1/4 cup sugar1 tsp salt2 eggs1 cup milk1/4 cup canola oil
Directions
Sift flour with sugar, baking powder and salt; stir in cornmeal. Beat eggs slightly, add milk and oil. Combine with dry ingredients, stirring only until moist. Pour batter onto warm waffle griddle. Cook each set until it is golden brown or as your waffle iron instructs.

    I will confess to adding dried cranberries to the batter, and Splenda Granulated instead of sugar, but it came out so good, I ate it plain.
