Jenha's Chicken Stir Fry

2 boneless skinless chicken breasts, diced2 tbsp extra virgin olive oil2 tsp VE Teriyaki Seasoning2 tsp VE Asian Stir Fry Seasoning2 stalks celery, sliced (on the bias)1/2 cup green onion, chopped1 small sweet red pepper1 medium sweet green pepper3/4 cup water chestnuts, drained and sliced4 cups baby bok choy, chopped1 tbsp teriyaki sauce
Cut chicken breast into 1-inch pieces and sprinkle with dry teriyaki and stir fry seasoning.
Heat wok over medium high heat and add oil until almost smoking. Add chicken and cook until all pieces are lightly browned. Add vegetables and stir fry for 4-5 mins or until celery has slightly softened (but is still crisp).
Add teriyaki sauce and stir mixture and cook for 1 additional minute. Serve.
Serving Size: Makes 4 hearty 2 cup servings
