Chicken and Broccoli Stir Fry

4 c chopped broccoli2 T vegatable oil divided.5 cup fresh chopped mushrooms6 ounces cherry tomatoes4 T shallots t5 drumsticks, bone removed and skinned and chopped2 T soy sauce divided1 t sugar2 T dry sherry divided1 T cornstarch1 T hoison sauce1 T sriracha 2 t garlic minced1 t ginger root minced.25 c chicken broth.25 c water
Combine 1T soy sauce, 1 t sugar, 1 T sherry and pour over chicken. Combine 1 T soy sauce, 1 T sherry, cornstarch, hoison, and sriracha with chicken broth and set aside. In a large frying or wok, heat 1 T veg oil on medium high. Add chicken and stir until cooked through 3-5 minutes. Remove from pan and set aside. Add garlic and ginger, stir 30 seconds or until fragrant. Add broccoli and stir for 1 minute, add tomatoes, mushrooms, and shallots stir for one minute. Add water and let steam until water is absorbed. Add remaining sauce mixture to pan as well as chicken and cook 2-5 minutes until chicken is heated through and sauce has thickened.
