Russian Tea Cakes

1 cup + 2 Tbsps all-purpose flour (brown rice flour for gluten-free cookies)1/2 cup butter1/2 cup powdered sugar6 Tbsps chopped walnuts1/2 tsp vanillaDash of salt
Preheat oven to 400.
Mix together butter, 1/4 cup powdered sugar, and vanilla
Slowly mix in flour, walnuts, and salt. Beat well.
Shape into 1-inch balls.
Place on ungreased cookie sheet, 1" apart.
Bake 10 minutes, until set but not brown.
Roll warm cookies in remaining powdered sugar.
Set on wax paper to cook completely.
Serving Size: Makes 25 cookies; serving size = 1 cookie
