Cheesy Broccoli and Rice Casserole

Boil rice in chicken stock with 1 tbsp butter and salt; cut broccoli into small florets, and put in microwave in covered dish with a little water for 2 minutes. Let stand till broccoli is cooked through but not soft. In the meantime, sautee chopped onion in olive oil 3-5 minutes, then add herbs de provence, and a little garlic powder and stir for about another minute. Add milk, condensed soup, parmesan cheese, and simmer. When rice is cooked, let stand for 5 minutes, then incorporate broccoli and sauce with rice. You can put in a casserole dish and bake in the oven with breadcrumbs and parmesan for 10 minutes if you'd like a crust on top, otherwise you can serve as is.
