chicken stir fry (Barbara)

Ingredients
12 oz uncooked chicken tenders1 yellow onion sliced2 stalks celery diced1/2 cup baby carrots diced1 cup bean sprouts1/2 cup whole almonds blanched1 peice of ginger for grating2 Tb low sodium soy sauce1 Tb cooking sherry1 t sugar
Directions
Add 1 Tb olive oil to wok; add almonds; remove when brown. Add onion; grate some ginger on the onions and stir fry until translucent; then remove. Add carrots and celery and stir fry until tender then remove. Add 1 Tb of olive oil and add chicken. Stir fry until cooked then add onions, carrots and celery back into the wok. Add bean sprouts. Heat through. Add soy mixture heath through and add almonds. If desired, serve over 1/2 cup cooked rice.
