sausage and tortellini soup

*Extra Light Olive Oil, 1 tbsp (remove)*Italian Sausage, pork, 4 link, 4/lb (remove)Chicken stock, home-prepared, 6 cup (remove)Oregano, ground, 1 tsp (remove)*Carrot Chips, Raw (3 oz), 2 serving (remove)Spinach, fresh, 2 cup (remove)*Frozen Cheese Tortellini (1 Cup), 1 serving (remove)*Mushroom - white, Raw 1 cup (70g), 1 serving (remove)
heat up oil in pot add sausage in small balls to oil and cook until well browned, stirring often. Pour off any fat.
stir in stock, oregano, mushrooms and carrots. Heat to boil, reduce to a simmer. cover and cook for 10 minutes or until the veggies are done. Add tortellini cook for another 5 minutes add spinach and cook for one minute.... serve!
